Throughout the winter months I’ve been enjoying creamy, chocolatey, nutty chia seed pudding flavours. With summer on our doorstep I have opted for lighter, fresher flavours, and this Mint Lemon Pudding is just so delicious I had to share it with you. Super simple and easy to make. 1/2 cup chia seeds
Greek yoghurt (or coconut yoghurt if you’re opting for vegan)
3 soft dates
Zest of one lemon
Large bunch of mint
Dried coconut shavings
Combine lemon zest, mint, coconut shavings, and dates in a food processor for one minute.
Transfer to a mixing bowl and add the coconut milk and yoghurt- wiz together with a hand-help mixer.
Finally fold chia seeds into mixture and refrigerate for at least two hours.
